On World Environment Day, St Georges is switching off.
Unplugged is a one-night dining experience where St Georges intentionally reduces its reliance on electricity and returns to more elemental ways of cooking. No overhead lighting. No electric cooking equipment. Fire takes over. Candlelight fills the room. The kitchen runs on technique - fire, curing, fermenting, preserving, and hand-craft from start to finish.
This is not about restriction. It's about reconnection - to food, to process, and to the energy we often take for granted.
What arrives on your plate will be the result of days of quiet, deliberate work. The kind that takes days, not minutes.
Francky's roots are in the soil. Real food, nurtured and grown, cooked with intention. That instinct has never left him - and Unplugged strips his cooking back to its most honest form.
Arrive into a room that feels different from the moment you walk in. Slower. Warmer. Candlelit throughout. Live music on the night. Considered service with space to be present.
This is one of those evenings people talk about long after. Seats are limited. There is only one night.
